Want to know what feels TERRIBLE? You can’t do any of those things because your ankle mobility and foot pain prevent you from pushing yourself on leg day.

My Favorite Quick & Healthy Late Summer Events

I get it. When back-to-school shopping, after-school activities, and no more vacation days add up, it can be hard to find time for cooking elaborate, healthy meals! However, I’ve found that a bit of planning in advance and some trusty and quick recipes can make all the difference. Here are a few of my favorites:

Watermelon Juice with Mint (a perfect alternative to juice boxes packed with additives!)

Ingredients

  • Watermelon
  • Fresh Mint
  • Mineral Salt
    Honey
  • Lime (Optional)

Directions

  1. Add watermelon, mint, salt, honey, and lime juice (if using) to a blender. No extra liquid needed!
  2. Blend till fully combined – about 20 seconds on high. Watermelon should be completely pureed.
  3. Pour the watermelon juice through a fine mesh strainer to remove any larger bits.
  4. Add the juice to a glass and garnish with mint, if desired. If you’re making this into a non-alcoholic drink, add a little salt to the rim to transform it into a fun mocktail.

Big Mac Burger Bowls

Ingredients

  • Ground Beef
  • Lettuce
  • Tomatoes
  • Mustard
  • Mayonnaise
  • Ketchup
  • Pickels
  • American Cheese
  • Shallots
  • Vinegar
  • Oil
  • Spices

Burger Sauce

  • Ketchup
  • Mayonnaise
    Dried Shallots

Direcions

  1. Make the burger sauce. Stir all the ingredients together until smooth, then taste and adjust any seasonings as needed. Refrigerate till ready to use.
  2. Heat a cast iron pan over high heat for at least 2-3 minutes. If using a lower-fat beef, add about 1-2 teaspoons of oil to the pan. Place ground beef into the hot pan, using a spatula to smash it down into the pan as thin as possible (this will get that classic burger sear). Sprinkle spices on top of the beef.
  3. Allow it to cook, undisturbed, for 4-5 minutes until a crust forms on the burger. Flip and cook on the other side another 1-2 minutes. Breaking up the beef as needed. Remove the ground beef from the pan and set aside.
  4. To the same pan, turn the heat down to medium-low, add the shallots, using the leftover juices from the beef to cook them, stirring occasionally till softened, about 5 minutes.
  5. Build your burger bowl. To large, flat bowls, add torn lettuce leaves, beef, shallots, American cheese, cherry tomatoes, and pickles. Drizzle the burger sauce on top.
