The summer holidays are upon us! From Cinco de Mayo to Mother’s Day, Memorial Day, and even the Fourth of July coming up in a few months, it’s the season of travel, beach days, and cookouts with family and friends. Unfortunately for many of us, the warmer weather brings with it a sense of anxiety and urgency. Thoughts like “Am I ready to get in my swimsuit?” or “Will people be able to see the cellulite on my legs in this dress?” can creep back in despite our best efforts to love ourselves throughout the rest of the year. This month, I wanted to share some tips, tricks, workout ideas, and product recommendations that will help you feel your most confident and beautiful this summer WITHOUT shame or restriction.

Strong Legs for Summer

Get stronger than ever (and build those leg muscles!) with these low-impact leg exercises:

  1. Seated leg extensions: You can do these in a gym on a weighted machine OR at home in a chair!
  2. Ankle circles: Create a larger range of motion and generate flexibility in your joints with this simple and restorative movement.
  3. Chair squats: Struggling with your squat form? Chair squats are a perfect way to safely perfect your form on this incredible compound movement.
  4. Standing knee lifts: Want strong legs AND defined abdominal muscles? This is the perfect movement for you!
  5. Calf raises: … because those calves aren’t going to build themselves!
  6. Side leg raises: This movement is excellent for hip flexor strength, glute growth and overall mobility!
  7. Toe taps: This movement will help you improve your ankle mobility and dexterity in no time!
  8. Leg curls: Ready to build strong, defined hamstrings? Grab a chair and get curling!
  9. Marching in place: This exercise is a perfect form of low impact cardio AND can help maintain your lower body strength!

Healthy Cinco De Mayo Recipes

Ready to celebrate Cinco De Mayo without the bloat and hangover? I’ve got you! Check out these two delicious (and nutritious!) recipes and read up on more here.

Shrimp Quesadilla

  • Red Onion and Garlic finely chopped and sauteed with the shrimp
  • Jalapeño: Mince one jalapeño. Leave some of the seeds in it for a spicy quesadilla.
  • Tomato: Dice one vine-ripened tomato.
  • Shrimp: You can buy shrimp peeled and deveined to save time. If you get frozen shrimp, thaw them in the fridge the night before making this quesadilla recipe.
  • Salt to season the veggies
  • Cilantro: Chop fresh cilantro.
  • Tortillas: Choose high-fiber tortillas with 110 calories or fewer, like Ole Xtreme. You can use different tortillas, but the nutritional info will change.
  • Cheese: You’ll need shredded pepper jack or Monterey Jack cheese.
  • Tomato Avocado Salsa: Tomato, avocado, lime juice, cilantro, red onion, salt

  1. Tomato Avocado Salsa: Combine the salsa ingredients in a bowl. When ready to use, drain in a colander so the quesadilla doesn’t get soggy.
  2. Vegetables: Heat a large nonstick skillet over medium heat, and sauté onion, garlic, and jalapeño in oil until soft for about two minutes. Add the tomatoes and salt and cook until thickened for a few minutes.
  3. Shrimp: Add the chopped shrimp and cilantro to the skillet and increase the heat to medium-high. Cook for one to two minutes until the shrimp turns pink and is cooked in the center. Transfer the mixture to a bowl and set aside.
  4. Prep the Skillet: Clean the skillet, spray with oil, and return the heat to medium-high.
  5. Cook the Quesadillas: Lay a tortilla flat in the pan, spread shrimp mixture onto one half, and top with cheese. Cook the tortilla for two minutes to melt the cheese then add the drained salsa. Fold the bare tortilla half over the filling with a spatula and press lightly to seal. Flip it over and cook until golden and crispy. Slice it into wedges and serve. Repeat the process with the remaining ingredients.

Boozy Watermelon Lime Granita

  • 4 ½ cups cubed seedless watermelon
  • 1 lime, juiced
  • 2/3 cup white rum
  • 2 tablespoons sugar
  • 6 small watermelon wedges, for garnish
  • mint leaves, for garnish

  1. Place the watermelon, lime juice, rum and sugar in a blender and process until smooth, then pour the puree into a 9 x 9 metal baking pan.
  2. Freeze for about 1 1/2 hours, then using a fork, give it a good scrape to mix everything around.
  3. Return the pan to the freezer and freeze until almost set, for about 1 to 2 hours. Use a fork to scrape the granita to form chunky snow-like ice crystals.
  4. Freeze and repeat occasional scraping until the entire mixture is frozen and shaved.
  5. Serve in martini glasses and garnish with watermelon wedges and mint.
  6. Store, covered in plastic wrap, until ready to serve.
