Grilled Chicken Skewers with a Homemade Tzatziki Sauce
Grilled Chicken Ingredients:
- 1 ½ boneless, skinless chicken breasts cut into small pieces
- 1 tsp. Cayenne
- 1 tsp. Oregano
- 1 tsp. Thyme
- Salt and Pepper to taste
- 1 tsp. Oil (Avocado or Olive)
Tzatziki Sauce Ingredients:
- 1 c. Whole Greek Yogurt (plain)
- ½ c. Cucumber (seeded and grated)
- 3 tbsp. Dill (fresh, chopped)
- 2 tbsp. Lemon Juice
- 3 Minced Cloves of Garlic
- Salt and Pepper to taste
Directions:
- Combine oil and chicken spices in a bowl and mix until chicken is evenly coated in oil and spices
- Combine Tzatziki sauce ingredients in a separate bowl and stir until well-combined
- Thread 2-3 pieces of chicken onto each skewer
- Grill for 7-10 minutes or until chicken is fully cooked
- Serve with your homemade Tzatziki sauce, lemon wedges, and fresh veggies

Refreshing Watermelon and Feta Salad
Ingredients:
- 2 c. Baby Arugula
- 1 Large Cucumber (diced with skin left on)
- 1 Handful of Chopped Mint Leaves
- ½ c. Feta Cheese (crumbled)
- 2 tbsp. Extra Virgin Olive Oil
- Lime Juice, Salt, and Pepper to taste
- ½ Medium Watermelon (cut into cubes)
Directions:
- Cut the rind off of the watermelon and cut the fruit into cubes
- Combine arugula, watermelon, cucumbers, feta cheese, and mint leaves
- Drizzle oil and lime juice over salad and spread salt and pepper to taste
