Satisfying Summer Eats

Workouts won’t leave the same results if you’re not eating healthy throughout the process. Below, we’ll share a couple of great summer eats to enjoy as you move your body:
Slow-Cooker Pork Tacos
Easy, filling, and flavorful — these delicious tacos are perfect for satisfying the taco craving while sticking to your healthy eating plan.
Ingredients:
  • 4 lbs. Boneless pork shoulder (cut into chunks)
  • 3 anchillo chiles
  • 3 pasilla chiles
  • 3 chipotles in adobo sauce
  • 4 cloves garlic (whole)
  • ½ white onion (chopped)
  • 1 tbsp. apple cider vinegar
  • 2 tbsp. honey
  • 3 tbsp. olive oil
  • 2 tsps. dried oregano
  • 2 bay leaves
  • 1 cinnamon stick
  • Salt and pepper
  • 3 ¾ c. chicken broth (low sodium preferred)
  • Corn tortillas
  • Assorted taco toppings
Instructions:
Step 1: Place anchillo and pasilla chiles in a bowl with a small amount of water and microwave until pliable (2-3 minutes). Place chiles and garlic into your blender.
Step 2: Add chipotle peppers, onion, olive oil, vinegar, honey, salt, and oregano to the blender as well. Puree until smooth.
Step 3: Pour mixture into pan and place over high heat until thick (around 8 minutes). Add chicken broth to reduce texture.
Step 4: Place pork in a slow cooker with salt, pepper, bay leaves, and cinnamon stick. Pour your sauce over the top of the meat. Cook on high for about 5 hours, or until the meat is done and tender.
Step 5: Remove cinnamon stick and bay leaves. Shred meat with fork and serve on tacos with your favorite toppings. Enjoy!

Oil and Vinegar Slaw

Try this tasty slaw for the perfect summer side — and a way to sneak a few more fresh ingredients into your diet:
Ingredients:
  • 16 oz. shredded cabbage mix
  • ¼ c. red wine vinegar
  • 2 tbsp. sugar
  • 2 tbsps. vegetable or peanut oil
  • 1 tsp. salt
  • Salt and pepper to taste
Instructions:
Begin by mixing your vinegar and sugar, and then stir in the oil. Add cabbage mixture and season with salt and pepper to taste. Toss, let sit for 20 minutes, toss again, and enjoy!

Get the kids out and about with a free 1-mile run every Tuesday this summer! Races begin at 6:30 pm, and participation ribbons are given at every session. Attend four or more for a free t-shirt as well!

Head on out to The Bay on Saturday, June 12th at 6:30 pm to enjoy live music from Jah Movement. The Regge/R&B/Soul/Funk tunes are sure to have you up and about. Food items will be available for purchase as you enjoy the music, too.
