Halloween Eats and Treats
Holidays tend to have a focus on food. Choosing healthy options in these settings can help you stick to your goal no matter what the celebration brings:
Mummy Pumpkin Bars
These bars have a fun theme, a sweet flavor, and plenty of healthy ingredients hidden inside.
Ingredients:
- Simple Mills Pumpkin Muffin and Bar Mix
- ¼ c. pumpkin puree
- 2 eggs
- 1 cup water
- 1 tbsp. olive oil
- ½ c. cream cheese (feel free to use vegan!)
- ½ tsp. pumpkin pie spice
- 1 tbsp. Maple syrup
- Chocolate chips
- Frosting
Instructions:
- Preheat oven to 350 degrees and prepare a lined 8×8 pan
- Stir mix, eggs, pumpkin, oil, and water together and transfer to baking dish
- Beat together cream cheese, syrup, and pumpkin pie spice
- Bake batter for 35-40 minutes, let cool, and decorate with chocolate chips and cream cheese frosting to add a fun, mummy style!
Spooky Turkey and Veggie Stuffed Bell Peppers
These adorably spooky entrees are the perfect way to stay on track through Halloween’s main dish.
Ingredients:
- 4 bell peppers
- ½ pound ground turkey
- ¼ c. chopped broccoli
- ⅓ c. chopped zucchini
- ¼ c. chopped tomatoes
- 2 c. tomato sauce
- ½ onion, diced
- 2 cloves garlic
- ½ tsp. basil
- ½ tsp. oregano
- ½ tsp. garlic powder
Instructions:
- Saute garlic and onion in oil over medium-high heat
- Add ground turkey and other veggies and cook until medium-done
- Carve jack-o-lantern faces into your bell peppers and fill with meat and veggie mixture
- Top with parmesan cheese and “pumpkin lid,” and bake at 425 degrees for 35 minutes
